Greyledge Farm, Roxbury, CT: Our source for pasture-raised pork products from the nitrate-free pepperoni, chorizo, and sausage we love to use.

Calabro Cheeses, East Haven, CT: This family-owned CT company has been specializing in Italian cheeses for over forty years. From them we often source: Ricotta, Mozzarella Fior Di Latte, Parmesean and Romano cheeses.

Pizza
It’s All About The Pizza.
Skinny Pines signature pies can best be described as Neapolitan-style with a local twist. Each pie is about 8 inches in diameter, made from local 00 wheat, using fresh ingredients, and finished in a 800º custom-built wood-fired oven.
The Dough
Our dough made from hard red winter wheat, a 100% whole wheat grain milled to 00 and sourced at Wild Hive Farm and Bakery in Clinton Corners, New York. We make our dough weekly, treating it to a minimum 12-hour cold fermentation, which varies based on temperature and humidity of Connecticut’s changing seasons. This delayed fermentation yields a flavorful and airy crust, that when combined with the magic of our wood-fired oven, yields the tiniest hint of pleasant nuttiness. This signature whole wheat dough and method is used to produce each and every Skinny Pines pie, cooked inside our custom Fire Within trailer which boasts a Forno Bravo oven.
The Oven
A Forno Bravo oven has a thick ceramic insulation and large firebrick tiles to enable the production of the best-tasting pizza possible. The design itself is a “Traditional Neapolitan Low Dome” which takes at least an hour to get up to 500º to over 900º allowing us to cook each pie quickly with just the right amount of wood-fired flavor and char. Since we started Skinny Pines in 2010, our most popular pies are the Bianca and our own creation, The Magic. The Bianca has endless variations, but our favorite version of this white pizza begins with a 50/50 blend of mozzarella and provolone (Grande cheeses), Sport Hill Farm rosemary, oil-cured Taggiasca olives and extra virgin olive oil. And our own creation, The Two Guys From Woodbridge also called The Magic, is an often-requested combination of shitake mushroom, bacon, onion, sage & mozzarella.
From the variety of farms and produce, to our wood-fired oven, the possibilities are endless.
